Vegan Gyros with Homemade Tzatziki Sauce & Roasted Chickpeas

One of my favorite Greek foods turned Vegan: Gyros! These Vegan gyros are made with roasted chickpeas and a delicious homemade Tzatziki sauce. This recipe is super easy to make and take no time at all. The best part is you can make these roasted chickpeas for a variety of dishes and recipes as well as the Tzatziki sauce (which makes a great dip!).

The first time I had Gyros was in Union Square in downtown San Francisco; I fell in LOVE with that city and it has been my favorite city ever since. The food, the downtown scene, the culture, the art, everything – I never wanted to leave. I had one bite of the gyro and was instantly a fan! It was soooo good that when I became Vegan, I HAD to make vegan gyros.



Tzatziki sauce was probably the harder part for me, trying to get it just right to remind me of my time in San Fran and the delicious Greek Tzatziki sauce I had there (we ate A LOT of Greek food). After multiple tries, I finally found the perfect recipe for this sauce, which makes a great dip too!



When deciding on the perfect ‘meat’ substitute, I went with roasted chickpeas – the combination of the roasted chickpeas and Tzatziki sauce almost melts in your mouth! SOOOO perfect 🙂

Ingredients

For the roasted chickpeas:
  • 3.5 cups cooked garbanzo beans
  • salt to taste
  • 1/2 tsp paprika
  • 1/2 tsp cumin powder
  • 1/2 tsp dried oregano
  • 1 tsp garlic powder
For the Tzatziki sauce:
  • 3/4 cup grated english cucumber
  • 1/2 cup vegan sour cream ( I used Good Karma)
  • 1/2 cup coconut yogurt (I used So Delicious)
  • 2 cloves minced garlic
  • salt and pepper to taste
  • 2 tbsp fresh lemon juice
  • 1/4 cup chopped dill

  1. Prepare the roasted chickpeas - preheat over to 475º
  2. In a large bowl, combine all the ingredients for the roasted chickpeas and mix well to make sure the chickpeas are completely covered in the spice mixture.
  3. Transfer to a cookie sheet and spread out in an even layer - do not overlap
  4. Bake at 475º for 15 minutes
  5. Make the Tzatziki sauce - grate the english cucumber on top of a thin towel or cheese cloth (leave the skin on - no need to peel) and squeeze out all the excess water.
  6. Transfer the grated cucumber and the rest of the sauce ingredients to a large bowl and mix until well combined. Store in the fridge until ready to assemble
  7. Assemble your gyros with the roasted chickpeas, Tzatziki sauce, greens (I used arugula), cherry tomatoes, red onions (you can even grill them!) and any other veggies of your choice.
