Instant Pot Aloo Gobi (Potato & Cauliflower Curry)

Traditional Punjabi Aloo Gobi made completely oil free and in an Instant Pot. Instant Pot dishes are perfect for the days you want a healthy and hearty meal, but don’t want to slave in the kitchen for a long time. Just throw everything in the Instant Pot with minimal cooking and bam – it’s that easy! God bless Instant Pot – SUCH a life saver.

This recipe is super easy to make and as with all Indian dishes, feel free to experiment with the spices. There’s no right or wrong way of adding spice, you have to play around with it to see which you like more of and which you don’t want any of – that’s the best part about cooking.

Instant Pot Aloo Gobi (Potato & Cauliflower Curry)

  • 5 Large gold potatoes - cubed
  • 1 cauliflower - cut into florets
  • 1 white onion - finely chopped
  • 1 seranno pepper - finely chopped
  • 2 tbsp ginger garlic paste
  • 1 1/2 tbsp mustard seeds
  • 1 1/2 tbsp cumin seeds
  • 1/2 tbsp garam masala
  • 1 tsp chaat masala
  • 1 1/2 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 1/2 cup dried fenugreek (kasoori methi)
  • salt to taste

  1. Turn your instant pot on with the saute mode on medium - as soon as it's hot, add in the mustard seeds and cumin seeds
  2. Once they start to crackle and lightly toast, add in the chopped onions and mix well until the onions are well covered with the seeds
  3. Add water as needed to ensure nothing sticks to the bottom and to help saute/cook the onions
  4. Add in the ginger garlic paste and seranno pepper - cook for another 1-2 minutes
  5. Add in all your spices, minus the salt and dried fenugreek
  6. mix all the spices together and add in water to make a lightly thick paste - then add the dried fenugreek and mix well
  7. Add in the potatoes, cauliflower, and salt - mix everything until the potatoes and cauliflower are completely covered with the spice mixture - this will definitely give your arm a nice workout :P
  8. Add 1/4 cup of water
  9. Pressure Cook for 6 minutes followed by a natural release
  10. Garnish with cilantro and enjoy :)
