Ingredients
Stuffed Dates-
12 Medjool Dates (if dry, rehydrate first)
1/3 cup creamy almond butter
1/4 cup pure dark chocolate
Turtle Pecan Date Balls-
8-10 pitted Medjool Dates
1/3 cup creamy almond butter
1/3 cup pecans
2 tbsp cocoa powder
2 tsp vanilla extract
1 tsp fennel seeds
1 tsp cinnamon powder
1 tbsp chia seeds
Pinch of salt
Ingredients
Instructions
For the Stuffed Dates with Almond Butter -
-
Make a slit in the middle without cutting all the way through, and carefully remove the pit (without breaking the date)
-
Take about 2 tsp of almond butter and carefully add it to the center of the date, where the cut was made
-
Freeze the dates for about 35 minutes
-
In the meantime, microwave your chocolate in 30-second intervals until it’s completely melted
-
You can either dip the dates in the chocolate or take a fork and drizzle the melted chocolate directly on top of the dates
-
Freeze again for about 10 minutes
For the Turtle Pecan Date Balls
-
combine all the ingredients in a food processor and pulse until all the ingredients are blended- the mixture should be firm enough to roll into small balls

Take about 1.5 tbsp of the mixture and form into balls (you can make it bigger or smaller depending on your preference)

Refrigerate for about 1 hour

Top with pecans and enjoy
