Stuffed Dates

The 2 KEY Ingredients in these desserts…

Our two ingredients in both recipes are Medjool Dates & Almond Butter!

Using Medjool dates and almond butter in the stuffed dates recipe and in the turtle pecan date balls recipe offers several benefits:

  1. Nutrient-rich: Medjool dates are naturally high in fiber, vitamins, and minerals, such as potassium, magnesium, and vitamin B6. They provide a natural sweetness without the need for added sugars. Almond butter adds healthy fats, protein, and additional vitamins and minerals like vitamin E and calcium, contributing to a well-rounded and nutritious snack or dessert.
  2. Energy boost: Both Medjool dates and almond butter are excellent sources of energy, thanks to their carbohydrate and healthy fat content. They provide a sustained release of energy, making them perfect for a pre-workout snack or a mid-afternoon pick-me-up.
  3. Satiety: The combination of Medjool dates and almond butter offers a satisfying mix of fiber, protein, and healthy fats, helping to keep you feeling full and satisfied for longer periods. This can aid in managing hunger and cravings, making these treats a satisfying yet guilt-free indulgence.
  4. Flavor and texture: Medjool dates have a naturally sweet and caramel-like flavor that pairs beautifully with the creamy richness of almond butter. Together, they create a decadent filling that adds depth and complexity to the stuffed dates. The addition of dark chocolate enhances the flavor profile even further, providing a perfect balance of sweetness and bitterness. In the turtle pecan date balls, the combination of dates, pecans, cocoa powder, and dark chocolate chips creates a symphony of flavors and textures, with the sweetness of dates complementing the richness of the nuts and chocolate.
  5. Versatility: Both Medjool dates and almond butter are incredibly versatile ingredients that can be used in a variety of recipes. They can be incorporated into both sweet and savory dishes, making them pantry staples for those looking to add natural sweetness, richness, and nutritional value to their meals and snacks.

Overall, incorporating Medjool dates and almond butter into these recipes not only enhances their flavor and texture but also boosts their nutritional value, making them a delicious and nutritious treat for any occasion.

How to Prepare Your Medjool Dates

Medjool Dates comes in SEVERAL varieties and textures. I find my Medjool dates from a local farm called Bautista Farms/7 Hot Dates (pssst..they ship all over the US), and they are just out-of-this-world amazing! They are always wet, juicy, and almost melt-in-your-mouth delicious. If your dates are not wet and are a little on the dry or harder side, then you will need to soak them in warm water for about 20-30 minutes prior to starting. This will ensure the softness of the dates remains the same.

    1. Make a slit in the middle of each date without cutting all the way through, and carefully remove the pit, ensuring the date remains intact.
    2. Spoon about 2 teaspoons of almond butter into the center of each date, where the cut was made.
    3. Place the stuffed dates in the freezer for approximately 35 minutes to firm up.
    4. Meanwhile, melt the dark chocolate in the microwave in 30-second intervals until smooth and creamy.
    5. Once the dates are chilled, dip each one into the melted chocolate or use a fork to drizzle the chocolate over the top.
