Medjool Dates comes in SEVERAL varieties and textures. I find my Medjool dates from a local farm called Bautista Farms/7 Hot Dates (pssst..they ship all over the US), and they are just out-of-this-world amazing! They are always wet, juicy, and almost melt-in-your-mouth delicious. If your dates are not wet and are a little on the dry or harder side, then you will need to soak them in warm water for about 20-30 minutes prior to starting. This will ensure the softness of the dates remains the same.

How do you make Stuffed Dates with Almond Butter

    1. Make a slit in the middle of each date without cutting all the way through, and carefully remove the pit, ensuring the date remains intact.
    2. Spoon about 2 teaspoons of almond butter into the center of each date, where the cut was made.
    3. Place the stuffed dates in the freezer for approximately 35 minutes to firm up.
    4. Meanwhile, melt the dark chocolate in the microwave in 30-second intervals until smooth and creamy.
    5. Once the dates are chilled, dip each one into the melted chocolate or use a fork to drizzle the chocolate over the top.
    6. Return the dates to the freezer for about 10 minutes to allow the chocolate to set.

How do you make Turtle Pecan Date Balls

  1. Place the dates, almond butter, pecans, cocoa powder, chia seeds, cinnamon, fennel seeds, vanilla, and salt into a food processor. Pulse the ingredients until thoroughly combined, creating a cohesive mixture with a firm texture ideal for shaping into balls.
  2. Using about 1.5 tablespoons of the mixture, shape into balls, adjusting the size to your preference.
  3. Refrigerate the date balls for approximately 1 hour to help them firm up.

Stuffed Dates-

12 Medjool Dates (if dry, rehydrate first)

1/3 cup creamy almond butter

1/4 cup pure dark chocolate

Turtle Pecan Date Balls-

8-10 pitted Medjool Dates

1/3 cup creamy almond butter

1/3 cup pecans

2 tbsp cocoa powder

2 tsp vanilla extract

1 tsp fennel seeds

1 tsp cinnamon powder

1 tbsp chia seeds

Pinch of salt

For the Stuffed Dates with Almond Butter - 

  1. Make a slit in the middle without cutting all the way through, and carefully remove the pit (without breaking the date)

  2. Take about 2 tsp of almond butter and carefully add it to the center of the date, where the cut was made

  3. Freeze the dates for about 35 minutes

  4. In the meantime, microwave your chocolate in 30-second intervals until it’s completely melted

  5. You can either dip the dates in the chocolate or take a fork and drizzle the melted chocolate directly on top of the dates

  6. Freeze again for about 10 minutes

For the Turtle Pecan Date Balls

  1. combine all the ingredients in a food processor and pulse until all the ingredients are blended- the mixture should be firm enough to roll into small balls

  2. Take about 1.5 tbsp of the mixture and form into balls (you can make it bigger or smaller depending on your preference)

  3. Refrigerate for about 1 hour

  4. Top with pecans and enjoy
