Dairy Free Ice Cream (Strawberry & Mango Peach) – No churn, No refined sugar, no coconut milk

Ice cream should be simple, fast, and super delicious. I LOVE dairy free ice cream, but don’t love the excess amount of coconut milk or sugar..and especially the sometimes lengthy process to make it. So I decided to simplify it with two of my favorite summer flavors – Strawberry & Mango/Peach Ice cream. Both are made with 5 or less ingredients all in the vitamix – No hassle, no nothing. Not to mention, they’re SUPER refreshing to eat in the hot summer days.

No churn ice cream! All you need is a good blender

What’s the benefit of making no churn ice cream? The only thing you need is frozen ingredients and a REALLY GOOD blender. Now, you HAVE to make sure you have a very high speed, heavy duty blender so your ice cream comes out smooth – not chunky. I only use Vitamix – it is pricey, but it’s a worth investment. They last FOREVER and mix everything to absolute perfection. (linking the one I have here)

How do I make it sweet?

Dates or maple syrup is all you need. You also want to make sure you’re only using ripe bananas – almost browned and gross looking – those have the most amount of sweetness, which is perfect for ice creams and desserts.

Dairy Free Ice Cream (Strawberry & Mango Peach) – No churn, No refined sugar, no coconut milk

Description

Strawberry Ice Cream:

  • 2 cups frozen strawberries
  • 5 bananas - sliced & frozen
  • 1 cup pitted dates
  • 3/4 cup almond milk

Mango Peach Ice Cream: 

  • 1.5 cup frozen mango chunks
  • 1/2 -1 cup frozen peaches
  • 5 bananas - sliced & frozen
  • 2 tbsp maple syrup
  • 3/4 cup almond milk

  1. Add all ingredients for the flavor into Vitamix - either blend using the Vitamix app (frozen desserts) or just blend on slow and gradually increase the speed until smooth and thick.

  2. Transfer to loaf pan - smooth out, and freeze for additional 3-4 hours.

  3. Scoop up and enjoy!
