A Healthy Twist to a Favorite

I’ve been making variations of banana bread for as long as I can remember. When it’s baking in the oven, my entire house smells like cinnamon and it’s the most cozy feeling ever; I absolutely love it. This Vegan, oil free, gf, and refined sugar free recipe will be warm up your heart with all the fuzzy feelings (without feeling guilty)!

Let’s talk Bananas!

For the sweetest and moistest banana bread, go for very ripe bananas with spots and a bit of brown. These bananas add a natural sweetness and make your banana bread smooth and lump-free. Choose those beautifully ripe bananas for the best flavor!

If you’re like me, you’ll like some banana bits in the bread, but if you want it completely smooth then I suggest using a stand mixer or electric hand mixer instead.

Ditch the sugar – use a natural sweetener instead… DATE SUGAR!!

Swap out sugar and try the natural sweetness of DATE Sugar! I usually used maple syrup or agave in my banana bread to cut out refined sugar, but for an even more natural twist, I went with date sugar. Dates are not only a super healthy natural sweetener but also incredibly tasty.

This is the BEST one I’ve tried so far and it’s perfect for baking.

Ingredients

3-4 ripe bananas (the more ripe, the better)

1 3/4 cup gluten-free flour (use measure to measure to be precise)

1/4 cup date sugar

1 tsp baking powder

1 tsp baking soda

1/5 tsp cinnamon powder

1/4 cup almond milk (or any non-dairy milk)

1/4 cup unsweetened applesauce

2 tsp vanilla extract

1.5 -2 cups frozen blueberries

  1. Preheat the oven to 350 and line a loaf pan with parchment paper.

  2. In a large bowl mash up your bananas - the consistency depends on your preference. I like to have mine with a few bits of bananas, so I don’t beat it completely smooth.

  3. Mix in the remaining wet ingredients and mix well

  4. Add in the dry ingredients and mix well

  5. Fold in the frozen blueberries

  6. Transfer to the loaf pan and sprinkle some extra blueberries and sugar on top for a nice crusty top

  7. Bake at 350 for about 70-80 minutes and let cool completely before serving

  8. Enjoy!
