Vegan Pizza with Puff Pastry

An easy, but delicious recipe that can be easily customizable. A perfect food for all your Vegan and even Non-Vegan friends.

My favorite part of this recipe is how customizable it is; you can make it vegan using vegan cheese and pepperoni and even make it for your non-vegan friends. You can put any toppings you like and just have fun with it!

This recipe is super easy and super quick, but so delicious!

There are tons of vegan cheeses everywhere, but I prefer Daiya Vegan Mozzarella shreds. It’s not heavy at all and has a better texture than actual cheese does. You can easily add vegan sausage slices, seitan, or even pepperoni; the point of this recipe is to just get creative and have fun with it.

Ingredients

  • 1 sheet Puff Pastry (thawed)
  • 3 cloves Peeled Garlic, finely chopped
  • 1 1/2 Tbsp Olive Oil
  • 1 cup of Daiya Shredded Mozzarella Cheese
  • 1 cup Cherry Tomatoes, cut in halves
  • Slices of Vegan Pepperoni
  • (additional toppings of your choice: bell peppers, onions, jalapeños, etc.)

  1. Preheat oven to 400º F.
  2. In a small bowl, mix together the garlic and olive oil. Keep aside.
  3. Take out the puff pastry and roll it out to stretch out the sheet. With a pizza cutter, cut the sheet right down the middle and put both pieces on a baking sheet.
  4. Using a pastry brush, brush the olive oil and garlic mixture on top of each pastry sheet.
  5. Top each sheet with cheese, making sure to lay it out evenly throughout.
  6. Add the tomatoes and pepperoni (or your desired toppings) and bake in the oven for 15 minutes.
  7. Enjoy!
