Vegan Peanut Butter Cups in just 3 Ingredients

Candy season is among us and nothing beats homemade treats! These homemade Vegan Peanut Butter Cups are absolute perfection and just have 3 ingredients! Instead of using refined sugar, I used dare paste (a natural sweetener) to act as my ‘sugar’ – even the peanut butter I used has no added oil! These peanut butter cups are PERFECT for any peanut butter and chocolate lover.





What’s the best kind of pan to use as the mold?

I’ve used cupcake pans with foil liners as well as peanut butter molds – both will work, I do like the silicone molds because of how easily they pop right out.

What’s the best Peanut Butter to use?

Hands down Good & Gather Organic Natural Creamy Peanut Butter – it’s made with 1 ingredient, roasted peanuts. It’s naturally sweet and soooo creamy. It’s the BEST peanut butter I’ve had in my life…and trust me, I’ve had A LOT of peanut butter!





Let’s talk sugar..

There’s no need for it! Use a natural sweetener like date paste (which is just blended up dates with water). I use it ALL THE TIME and absolutely love it in baking. If you’re worried it might not be sweet, DON’T! Even with the date paste, it’s still super sweet (in a good way)!

How should I store the peanut butter cups?

Best way to prevent them from melting (like they did under my photography lights), is to keep them in the fridge after the initial time in the freezer. Keeps them not too soft and not too hard.

  1. Melt your chocolate in the microwave in 10 second intervals
  2. Add a small amount of chocolate in the bottom of your molds to create a thin layer
  3. Freeze for 10 minutes
  4. In the meantime add the peanut butter and date paste to a bowl and mix well - be sure to mix thoroughly
  5. Take the molds out of the freezer and add 1 tbsp of the peanut butter mixture on top of the chocolate layer - smooth out to create an even layer
  6. Add a layer of melted chocolate right on top of the peanut butter
  7. Freeze for 1- 1.5 hours
