This decadent Vegan French Silk Pie will seriously blow your mind. It’s rich, velvety, and absolutely amazing. It’s made with simple ingredients and super easy to make. It’s perfect for any occasion and will be sure to impress everyone. Definitely one of my favorite vegan desserts.

A flourless, gf pie crust? YESSS PLEASE!

The pie crust I made for this pie came out exactly how I wanted it to – light, soft, and went perfect with the filling. I didn’t want to use crackers or oreos and put a bunch of melted vegan butter, I also didn’t want to put in all the hard work of making a pie crust with flour, etc. I wanted something simple with a minimal amount of ingredients and was quick to make. So I thought of what I traditionally use instead of butter or oil, something that would still hold together into a dough form. Dates!!! They are so sweet in flavor and gooey in texture, making them the perfect ingredient to hold my crust together.
I made my crust with a mixture of cocoa powder, cashews, and dates.

Cocoa or Cocao?

You can use either really – I always go for Organic Cocoa powder; it’s got the perfect amount of sweetness and doesn’t make you feel guilty afterward.

Homemade Vegan Whipped Coconut Cream is HEAVEN!
You can easily use store bought coco whip, but I always prefer to use my own homemade version to avoid any excess amounts of sugar.

Ingredients

For the crust:

  • 1 cup cocoa powder
  • 1/2 cup cashews
  • 1 tsp coconut sugar
  • 1/2 cup pitted dates (about 10 dates)

Vegan French Silk Pie

  • 1 cup chilled coconut milk
  • 1/4 cup cocoa powder
  • 1/2 cup melted chocolate
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1/4 cup chilled coffee
  • 1 block silken tofu
  • Gluten free pie crust (see above for homemade recipe)
  • Coco whip (homemade or store bought)

For the crust:

  1. Make the crust by adding cocoa powder, cashews, and coconut sugar to a food processor with the s blade and pulse until it's reached a very fine texture

  2. With the speed set to low, start adding the dates in one by one then increase the speed to high. Mix until it's become a dough texture.

whipped coconut cream:

  1. This recipe calls for 1 can of refrigerated coconut milk (full fat) with the cream scooped up from the top.. do not use the liquid part

  2. Place a steel mixing bowl in the freezer about half hour before you're about to make the whipped cream.

  3. When ready, add the coconut milk into the chilled steel bowl

  4. Whisk until stiff peaks form

  5. Keep in the fridge until ready to use

Vegan French Silk Pie

  1. The night before, stick a can of coconut milk in the fridge - you want it to be chilled before you use it.

  2. In a blender (Vitamix), add the tofu, cocoa powder, melted chocolate, chilled coffee, vanilla, and maple syrup - blend until smooth, transfer to a bowl.

  3. In a bowl, scoop out the top part of the coconut milk (only the fat, not the water). Using a hand mixer, whip the coconut milk until it soft peaks begin to form.

  4. Transfer the coconut milk into the pie filling and fold in until completely incorporated.

  5. Pour the pie filling into the prepared pie crust and smooth over - let chill in the fridge overnight.

  6. Add dollops of coco whip (homemade or store bought) on top and serve - enjoy.
