Vegan Chewy Granola Bars

Made with chocolate, peanut butter, and lots of love; these granola bars are not only delicious, but super easy to make. I’ve added raisins and vegan chocolate chips in my granola bars, but you can easily customize to use whatever you prefer 🙂 The best part about baking is experimenting and having fun with it.



I’ve always always ALWAYS loved the combination of chocolate chips and raisins; whether it’s in cookies, cereal, or bars, it’s always been my favorite. When I added in peanut butter to this recipe, it took it to a whole ‘nother level (where my peanut butter lovers at?). I swear, I put peanut butter on everything..Ice cream, yep – fruit, yep – cookies, oooo yeah! I just love it sooo much, so naturally I HAD to put it in here.



If you’re not fond of raisins, then feel free to swap it out with your favorite dried fruit- cranberries work great too!

The chocolate drizzle is completely optional, I just like to make it extra fancy and extra chocolate-y. You can also drizzle some melted/thinned out peanut butter as well…because why not? 🙂

  • 2 cups oats
  • 1/4 cup almond flour
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • 1/2 cup peanut butter (for oil free, make sure you use an oil free peanut butter)
  • 1/4 cup almond milk
  • 1/2 tsp vanilla extract
  • 1/4 cup unsweetened applesauce
  • 0.5 cup raisins
  • 1/4 cup vegan chocolate chips
  • 1 large ripe banana

  1. Preheat oven to 350º and prepare your square baking pan by lining it with parchment paper with an overhand on the side (this will help remove the granola bars from the pan).
  2. Mash your ripe banana. I just used a fork, but you want to make sure it's completely smooth and mashed.
  3. In a large bowl add all your dry ingredients (oats, almond flour, salt, cinnamon, and coconut sugar)- mix to combine.
  4. Add in your mashed banana, applesauce, almond milk, vanilla extract, and peanut butter. Mix well until everything is properly incorporated together.
  5. Fold in the raisins and chocolate chips (you can adjust amounts to your own personal preference)
  6. Pour the granola mixture into the prepared baking pan and bake for 23-25 minutes
  7. Let it cool at room temperature for about 30 minutes - VERY IMPORTANT!
  8. Once it's cooled completely, add your melted chocolate drizzle and cool in the fridge for an additional 25-30 minutes. **if you're not adding any drizzle on top, still be sure to cool the granola in the fridge prior to cutting**
  9. Cut into long bar sized shapes and enjoy :)
