Creamy Fettuccine Alfredo

Veganzing Alfredo sauce to where it ACTUALLY tastes like Alfredo sauce is the probably the most amazing feeling ever. Now you can enjoy this Vegan version that’s also gluten free AND oil free; healthy & tasty!





Does it really taste like Alfredo?

I’ve tried LOTS of Vegan Alfredo sauces and have tried making this sauce several times and none of them came close to actually tasting like Alfredo sauce, until I made this one. It’s been approved by non-vegans too!! The key is to follow the ingredients exactly without any substitutions – if you want that Alfredo taste.




What else can I use Alfredo sauce with?

EVERYTHING!!! This sauce is just out of this world amazing. It goes great with almost any kind of pasta and you can add your own additions like sautéed mushrooms or even Gardein chicken strips to make Chicken Alfredo. You can also use this sauce to make your very own Vegan White Sauce Pizza…can I just say that it’s just the most amazing thing ever!




How do I get the sauce to be extra creamy?

Vitamix! It’s seriously the best blender in the market in my opinion. I use it for all my sauces, dips, cheeses, and soups. It’s the only blender I’ve used that actually makes my cheese sauces extra creamy and lump free, even when I throw raw cashews (without soaking) in there. If you don’t have a Vitamix, then I would strongly suggest to soak your cashews in boiling water for about 10 minutes and use a good quality high speed blender (Instant Pot Blender is my second favorite and much more affordable than Vitamix).

  • 1 cup (100 g) boiled or steamed cauliflower
  • 1 small cooked potato
  • 1 diced white onion
  • 3.5 tbsp raw cashews
  • 2-3 tbsp nutritional yeast
  • 5-6 cloves garlic
  • 1/2 tsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp Italian seasoning
  • 1 cup veggie broth - divided 1/4 to sauté onions and 3/4 in blender

  1. Prepare noodles according to package instructions **make sure to season the boiling water with some salt

  2. In a hot frying pan, add the diced onions and sauté for 1 minute. Once the onions begin to stick to the pan, add 1/4 cup of the veggie broth - sauté until the broth has cooked down and the onions are translucent - transfer to blender.

  3. Add in all the remaining ingredients to the blender with the onions and blend until smooth.
  4. Pour over cooked pasta and serve hot
