Chickpea Avocado Sliders

Chickpea Avocado sliders are the best easy to put together food for lunch, dinner, or even a get together. I just added a few spices to my mixture, but you can customize how you like to add additional seasonings and spices of your choice. These sliders are super easy to make and are packed with protein and flavor!

Can I make these ahead of time?

Yes! Just make the patties, cover them in foil and stick them in the freezer. Just pop them out when you’re ready to cook and assemble the sliders.

What kind of rolls should I use?

I wanted to make this completely gluten free, so I used these gf vegan ciabatta rolls. You can use any rolls of your choice, just make sure they’re vegan and gf if that’s what you prefer.

Do I need to use any flour?

I didn’t need to. I just used bread crumbs instead – it adds more flavor, but you can easily substitute the bread crumbs with gluten free flour instead.

Keep it healthy with healthy spreads/sauces.

For these sliders, I kept it pretty simple. I used an avocado spread as the base for the buns and then a creamy Tzatziki sauce for the topping. The combination was AMAZING!!!

Avocado spread:
Mash up 1 large ripe avocado, 1 clove garlic, 1 tsp paprika, salt, and 1 tsp of lemon juice – mix to combine well.
I used my homemade vegan Tzatziki sauce recipe for these sliders. I love this sauce, it goes well with pretty much everything and it’s so flavorful.

Can I bake these instead of cooking them on the stove?

Yes you can. Just place them on a baking sheet lined with nonstick parchment paper and bake them at 400º F for 20-25 minutes, flipping them over halfway.

What toppings should I use?

Any toppings of your choice. I used fresh arugula and sliced red onions for my sliders. Cherry tomatoes, caramelized onions, or even avocado slices would be great toppings as well.

For the patties:

All else:

  • GF Ciabatta Rolls
  • Vegan Tzatziki Sauce
  • Avocado spread (see above for recipe)
  • Toppings of choice (I used arugula and sliced red onions)

Off On

  1. Make the tzatziki sauce and avocado spread ahead of time and keep in the fridge until ready to use
  2. In a large bowl add the cooked chickpeas and mash thoroughly with a potato masher. If you want a smoother mixture, you can use a food processor as well.

  3. Add in the avocado, cumin, coriander, onion powder, paprika, and salt. Mix well until completely incorporated
  4. Add in the GF bread crumbs and mix thoroughly
  5. Line a baking sheet with parchment paper and form the mixture into thick patties. Check the size of your buns/rolls to make sure your patties are the right size

  6. Transfer patties to the baking sheet and refrigerate for 25 minutes
  7. Heat up a large iron skillet and cook the patties 3-4 minutes each side.

  8. Assemble your sliders by spreading the avocado spread in between each roll, place your pattie on top, add a heaping amount of tzatziki sauce, and then add your toppings on top.
  9. Serve and enjoy!
