3-4 ripe bananas (the more ripe, the better)
1 3/4 cup gluten-free flour (use measure to measure to be precise)
1/4 cup date sugar
1 tsp baking powder
1 tsp baking soda
1/5 tsp cinnamon powder
1/4 cup almond milk (or any non-dairy milk)
1/4 cup unsweetened applesauce
2 tsp vanilla extract
1.5 -2 cups frozen blueberries
Preheat the oven to 350 and line a loaf pan with parchment paper.
In a large bowl mash up your bananas - the consistency depends on your preference. I like to have mine with a few bits of bananas, so I donβt beat it completely smooth.
Mix in the remaining wet ingredients and mix well
Add in the dry ingredients and mix well
Fold in the frozen blueberries
Transfer to the loaf pan and sprinkle some extra blueberries and sugar on top for a nice crusty top
Bake at 350 for about 70-80 minutes and let cool completely before serving
