One of my favorite Greek foods turned Vegan: Gyros! These Vegan gyros are made with roasted chickpeas and a delicious homemade Tzatziki sauce. This recipe is super easy to make and take no time at all. The best part is you can make these roasted chickpeas for a variety of dishes and recipes as well as the Tzatziki sauce (which makes a great dip!).
The first time I had Gyros was in Union Square in downtown San Francisco; I fell in LOVE with that city and it has been my favorite city ever since. The food, the downtown scene, the culture, the art, everything - I never wanted to leave. I had one bite of the gyro and was instantly a fan! It was soooo good that when I became Vegan, I HAD to make vegan gyros.

Tzatziki sauce was probably the harder part for me, trying to get it just right to remind me of my time in San Fran and the delicious Greek Tzatziki sauce I had there (we ate A LOT of Greek food). After multiple tries, I finally found the perfect recipe for this sauce, which makes a great dip too!

When deciding on the perfect 'meat' substitute, I went with roasted chickpeas - the combination of the roasted chickpeas and Tzatziki sauce almost melts in your mouth! SOOOO perfect :)
