I think one of my favorite smells (and tastes, of course) is mushrooms sautéd in butter. It reminds me of that movie Julie & Julia when she says 'don't overcrowd the mushrooms' and you see a big chunk of butter in the skillet. LOVE IT! Butter is honestly, EVERYTHING.
Stuffed Mushrooms take no longer than 20 minutes, including prep time. It's super simple and extremely delicious. Perfect for appetizers or starters at your next dinner gathering. These are the perfect bite size snacks! I made them vegetarian but you can easily add meat if you want as well. All you have to do is add ground turkey (or beef) and cook it into the stuffing mixture.
Ingredients: 16 oz Large White Mushrooms 1.5 Tbsp Butter Half an onion (finely chopped) 3 cloves Garlic (minced) 1 Roma Tomato (finely chopped) 1 Tbsp Paprika Salt to taste 1/4 cup Bread Crumbs (I used Italian style) Parmesan Cheese
Preheat oven to 325º F.
Brush Olive Oil on a baking sheet and remove the stems from the mushrooms. Don't throw them away, you'll need them for the stuffing.
Place the mushrooms on the baking sheet with the opening side up. Gently dab with a paper towel to get rid of any excess moisture.
Bake in the oven for about 12 minutes.
Meanwhile, in a skillet add the butter on medium.
Finely chop the mushroom stems and add those into the skillet.
Add in the onions and cook for about 1 min. Then add the garlic followed by the rest of the ingredients. (Add in the cheese and Bread Crumbs last).
Take a spoon and begin stuffing the mushrooms, it's okay if you overfill them.
Once you've stuffed all the mushrooms, top them off with more bread crumbs and cheese.
Put the mushrooms back in the oven and broil for 2-3 minutes.
Serve immediately and Enjoy!
